Thailand Recipes: Nam Prik Kaeng Kari


Ingredients:
- 8 Dried Chillies, chopped
- 1 teasp Cumin Seeds
- 1 teasp Coriander Seeds
- 1/2 teasp Ground Cinnamon
- 1 teasp Salt
- 1/2 teasp Ground Cloves
- 1 tbsp chopped Lemon Grass
- 2 tbsp chopped Shallots
- 1 tbsp chopped Garlic
- 1 tbsp Yellow Curry Powder
- 1 teasp Oil
Preparation:
1. Place the chopped chillies in a little warm water and soak for 10 minutes.
2. Meanwhile, place the cumin and coriander seeds in a saucepan without adding any oil and dry-fry them over medium heat for 2 minutes, stirring all the time, until they give off a roasted aroma.
2. Drain the chilies and place in a mortar together with the remaining ingredients. Pound together to form a smooth paste.
Refrigerate until ready to use. Serve at room temperature.
